Mine is Aged Swiss. I love a good somewhat strong swiss. Hell I eat slices of it cold for a snack on occasion. I also like sharp cheddar, gouda, monterey jack, colby jack, white cheddar, and the fancy deli american you can buy at some places.

I can't remember the name, but there's a type of creamy French cheese that I regularly buy that is delicious.
Has no one else picked Bleu Cheese? Goes good in salad. Goat Cheese is an ok substitute sometimes.
Raw queso is bomb too.
