Mine is Aged Swiss. I love a good somewhat strong swiss. Hell I eat slices of it cold for a snack on occasion. I also like sharp cheddar, gouda, monterey jack, colby jack, white cheddar, and the fancy deli american you can buy at some places.

Smoked gouda, mild cheddar with annato(the yellow cheddar), cheddar cheese curds, Monterrey jack, fresh buffalo mozzarella, Parmesean, Romano, and a whole shit ton of others. Also any type of smoked cheese I usually love.

Picked up some organic raw cheddar today.
Also a small bit of roaring 40's tazmanian blue today. Not cheap but awesome cheese
