Yes.
I just melt regular cheese onto them.
It sounds/smells disgusting... But it's pretty good. After a few chips I'm already sick to death of it though, so kinda beats the point of me ever getting some.
Honeslty I can eat machine vender nacho cheese all day long, but I never feel proud of it.

Know whats good to do with the nacho cheese at 7-11? Get one of those hotdogs, put nacho cheese on the bottom of the bread, and then nacho cheese on the top. Way more cheese per bite.

I had cheddar that was aged 7 years once that was really good but the texture was totally different, it was downright brittle.
I'm not fond at all of aged cheeses and it seems the more expensive they get; the shittier they taste, and as you mentionned, the older or "grainier" it feels.
My favorite cheese product is hands down Babebel

I am personally a Swiss Cheese lover myself. For some reason I find that it compliments almost every sandwich I put it on, though maybe that is just because I love it so much. It has this almost sweet twang to it, very subtle and kind of stale. But then again, I've always had this thing for stale foods, IG I let my hot cheetos go stale after a day-ish because I like the chewy-ness it makes the cheetos and the way it blurs the taste with the texture. But I digress.
