I'm gonna make some nice meatballs tonight.
What do you guys put in them? (next to ground meat of course)

For me :
Eggs
Onion
Garlic
mustard
Ketjap Sauce
Cayenne pepper
Breadcrumbs (but i use some http://en.wikipedia.org/wiki/File:Beschuitje.jpg which i grind to bits)

If I want tasty meatballs, I usually just buy meat at the actual butcher instead of the supermarket.

My meatballs are something like this.

Ground beef
Italian sausage meat
Ground Veal
Shallots
Garlic
Panko bread crumb
egg
milk
oregano
basil
paprika
Cayenne pepper
garlic powder
onion powder
pepper
sea salt
Romano cheese
Parmesean cheese

What really makes it nice is when you start off with a wine heavy kinda soupy marinara sauce and reduce the heat slowly in a crock pot. Brown the meatballs on the outside before you throw em in the crock pot. When they're sitting there all day it should turn the inside of the meatballs a really dark red wine color.

Ground beef + veal
Stale bread
Egg
Pressed garlic
Freshly chopped basil + parsley
Salt + pepper

Simple, but delicious.

I do use onion sometimes preferably red. But mostly when i make these large and crude manly meatballs instead of when i make them perfectly round and smooth on the inside as well.

Depends on what's available in the house at the time and my mood.

Sometimes it'll be simple and will be just salt, pepper, parsley, basil, oatmeal and flaxseed.

But then I put in too much flaxseed and it ruins the meat ball.

Other times, I would do a "proper" meatball with egg, breadcrumbs, some oats, onion, garlic, salt, pepper, ore no, basil and parsley.
