As I've run out of Borsan, I decided to make Carbonara using cheese-sause, shame my camera isn't working to show you how tasty it looked, it's so simple, cheap and good for you!

You shall needeth (feeds two):
Pasta of your choice
4oz of cheese (I used mature chedar, thich cheese is best)
1 Tble spoon of flour (sieved)
1 Tble spoon of butter
1/2 a pint of milk
Salt
Pepper (optional)
Bacon (optional, but if you eat meat highly recommended
Basil (optional)
Olive oil (optional)
Garnish, such as rocket (optional)

First of all get a pan with water going, this is for the pasta when it comes to the boil.

In another pan add the butter, and melt it on a very low heat - patience is the key. Then slowly add the flour, stir until it's a consistent paste. Start to add the milk, bit of bit, constantly stirring.

You're water should be ready for the pasta now, also if you want bacon now is a good time to start cooking that.

Bit by bit put the cheese into the sauce, add salt and pepper if you wish. Turn the heat up a little, but don't let it boil - carry on stirring for a few minutes.

When your bacon is ready cut it into little squares, then drain the pasta, add your cheese sauce and bacon - stir it all together for a minute or so. It was here that I added some Basil - really brings out the taste.

There you are! I like to put olive oil and some kind of salad with it as well. DELICIOUS. :D
