Jerk seasoning. This is particularly amazing with chicken. Slap some around your chicken before cooking, and after it's done, go ahead and rub some more on there. It also works GREAT on pizza.

The Jamaica Sun brand is the best jerk I've tasted so far btw.

I do know that was makes it really spicy are the Scotch bonnets. I'm gonna have to look up a recipe and try to make the most delicious jerk on earth.

I went to this place called The Hobbit the other day, where they have LOTR inspired shit and pictures and what-not.

I got a Jamaican jerk burger and it was good. Lettuce, tomatoes, mayo, jerk sauce, meat.

Actually, I was looking up recipes for jerk seasoning or jerk sauce not to long ago.  I want to make my own, but it's such a complex flavor that I don't know how to modify it well to make it more suit my tastes.  I'm doubting anybody here has tried it, but if you have, give me some ideas!
