You need to get him to cut you a piece of a cow's diaphragm.
Just the part that's sitting right near the kidneys.
It's really chewy if you like jerky, but you can cook it however you wish.
It's the most flavorful part of the cow.
The most tender part is right above the hooves I think, but it tastes like spinach-piss and hominy.
Make sure he gives you the good part of the diaphragm so you know what I'm talking about. It'll be about a pound.
Get it stuck in your teeth.
