Right now it's Chime. Historically it's been Morrowind, though. Baba Yetu (Civ 4 theme) is pretty epic also. The main menu music for Mirror's Edge I can play for hours in the background, also.

Edit: This game just came out on the PC for Steam also, btw. It's only $5. Good game to play to relax or when you're bored.
