So I just went out and bought a Yamaha Audiogram 6 USB recording console. It's a two-track, so nothing too spectacular, but it does the job very well for what i need it for.

I also purchased a TC Electronics Harmony G floor pedal, which is amazing. It really rounds up my voice nicely and I can trigger a switch that will add back vocals to the mix whenever I want. Here are a few demos. (The back vocals only come in at the chorus')
