I want to tell you how I make red beans and rice from scratch. I did it last week, and it was really tasty and surprisingly easy to make.
The first and most important step is to soak the beans overnight. The next day, pretty much as soon as you wake up, drain them, replace the water, and boil them in a large soup pot. Then simmer it for about four hours. The beans should be mushy and sort of gravy-like when it's done. While it simmers, add the following:
-2 onions, diced
-1 green bell pepper, diced
-2 stalks celery, thinly sliced
-a bunch a of garlic (I used almost half a jar of minced garlic)
-Tony Cachere's seasoning blend to taste
-a few dashes hot sauce
-a dash of soy sauce
-some ground cumin
-tomato paste, or some ketchup if you don't have that
If you want, you can add ham hocks or a ham bone or some smoked sausage, but I didn't do that. And then if you have other stuff to do, like laundry, you can do that while it cooks. Don't forget to stir it sometimes!
It serves about 6. Serve over rice.

pop-tart

It does sound delicious. My grandmother makes pinto beans prepared a similar way (with sausage) and it's one of my favorites.

Make sure you go through your bag of dry beans and check for small stones. It's rare.... but they have popped up before.

-salt and vinegar flavour McCoy's crisps
